Preface

With the development of human society and the improvement of living standards, consumers have higher requirements for food. Food is not only rich in nutrition and delicious, but also safe and hygienic.
   With the development of food quality and safety detection technology, it has become an important part of promoting the progress of food production enterprises. It is mainly reflected in the improvement of food quality and the whole process verification activities, and coordinated with the management activities of food production enterprises, thus effectively ensuring the steady improvement of food quality and constantly meeting the needs of social development and the improvement of people’s material living standards.

 Food quality and safety testing is one of the important means to ensure food quality and improve food safety. With the development of science and technology and the improvement of people’s requirements for food, food detection instruments are constantly updated, the level of detection technology, detection sensitivity and detection limit are constantly improved, and the detection methods are also constantly updated, especially for the rapid detection of toxic and harmful substances. Therefore, it is the responsibility and obligation of food testing institutions, food quality inspectors, quality control personnel and relevant scientific and technological personnel to fully understand and master the food quality and safety testing technology.


前 言

随着人类社会的发展和生活水平的提高,消费者对食品的要求更高,食品除营养丰富、美味可口外,还要安全、卫生。
       食品质量安全检测技术发展至今,已成为全面推进食品生产企业进步的重要组成部分。它突出地体现在通过提高食品质量和全过程验证活动,并与食品生产企业各项管理活动相协同,从而有力地保证了食品质量的稳步提高,不断满足社会日益发展和人们对物质生活水平提高的需求。
      食品的质量与安全性检测是确保食品质量,提高食品安全性的重要手段之一。随着科学技术的发展和人们对食品要求的提高,食品检测仪器不断换代,检测技术水平、检测灵敏度及检测限不断提高,检测方法也在不断更新,尤其是针对有毒有害物质的快速检测新方法不断推出。因此,全面了解和掌握食品质量与安全检测技术,是食品检测机构、食品质量检测人员、 品控人员及有关科技人员的责任和义务。

Guo-Jun Wang, male, the Han nationality, bachelor’s degree, senior engineer, national registered examiner, born in Taizhou City, Zhejiang Province in August 1981. He graduated from Ningbotech University of Zhejiang University majoring in bioengineering. He is now working in Taizhou Fangyuan Quality Inspection Co., Ltd., and is committed to the quality inspection of food, food related products, chemical products and other products. He has been awarded the title of “model Iron Army” by the Municipal Quality Inspection Institute and the Municipal Quality Supervision system for many times. He has successfully applied for collective honors such as the city worker pioneer and the provincial women’s civilized post. He has a number of academic research results and published in national journals, award-winning.


王国军,男,汉族, 1981 年 8 月生,浙江台州人,毕业于浙江大学宁波理工学院生
物工程专业,本科学历、高级工程师、国家注册审查员.现就职于台州方圆质检有限公司,致力于食品、食品相关产品、化工产品等产品质量检测。多次获市质检院、市质监系统先进工作者,获示范铁军称号,成功申请市工人先锋号、省巾帼文明岗等集体荣誉。具有多项学术研究成果并在国家级刊物上发表、获奖。

Rong Zhang, female, the Han nationality, master’s degree, born in Hohhot, Inner Mongolia in March 1982. She graduated from Inner Mongolia Agricultural University. She is now the quality inspection engineer of Wuhai Inspection and Testing Center, and has been awarded the third grade of wine taster. In 2016, 2018 and 2019, she was awarded the title of “Excellent Communist Party member” by the unit.


张荣,女,汉族, 1982 年 3 月生,内蒙古呼和浩特人。毕业于内蒙古农业大学,研究生学历。 现任乌海市检验检测中心质量检验工程师, 葡萄酒品酒师三级。 2016 年、2018 年、 2019 年被单位评为“优秀共产党员”称号。
